Maple Oatmeal Bread

'Tis as amazing as it sounds, if I do say so myself. 


And I do say so - so go and gather these ingredients: 
1 3/4 warm water 
1 cup milk 
1/2 pure maple syrup (VERY IMPORTANT: No HFCS
1 1/2 Tbsp yeast 
1 Tbsp salt 
1/4 neutral oil - I used grapeseed oil 
2 cups old-fashioned rolled oats 
2 cups whole wheat flour
2 cups unbleached all-purpose flour
1/2 cup vital wheat gluten flour 


Start by putting the yeast, salt, and maple syrup in the bowl. 


Then add the water, oil, and milk. (It doesn't stay green, I promise!) 


Followed by the oats. 


And finally, the flour. Mix well with a wooden spoon and leave to rise for about 2 hours. Then, either form loaves right away by dividing the dough into 3 equal parts, shaping first into a ball and then into a loaf shape, and place into a greased loaf pan to rise for another 40 minutes. OR you can simply store the dough in the refrigerator for up to 10 days and use it when you are ready, but increasing the second rise time for 80 minutes. 


Bake for 45-50 minutes at 350F with an old pie tin or oven-safe dish filled with about 1/2 inch of boiling water. 


And allow it to cool before you sink your teeth into this slightly sweet loaf of maple oatmeal bread! 


I LOVE this loaf! It is slightly sweet and easy to eat on its own, but not too sweet that it doesn't go well on a sandwich. 


Like a turkey + grilled eggplant + caramelized onions + smoked gouda cheese + spinach sandwich. This was perhaps one of the best sandwiches EVER.
