A Mosaic Made Meal

Last night I apparently could not decide HOW I wanted to cook dinner. So I used what Ross called a "Mosaic" of kitchen appliances - or basically, everything but the Crockpot or a fire.

I steamed the broccoli on the stove top

Which was where I also made my cheesy roux. This is perfect for dipping veggies in, or how I make my homemade macaroni and cheese!

2 Tbsp butter or oil
2 Tbsp whole wheat flour
1 cup milk
1 cup cheese (usually cheddar)
1-2 garlic cloves, minced
Salt, pepper, chili powder, or spices all gusto

Melt the butter on a medium-low heat and then add in the flour and mix well. Add the milk. After this, stir almost continuously. Add the cheese a little at a time allowing it to melt. Add the spices with the cheese. Then - use to dip, or toss over cooked noodles for macaroni and cheese!

Then I roasted potatoes in the oven.

And grilled asparagus on the George Foreman grill.

Cooked the Morningstar Buffalo Wings in the toaster oven. Out of habit really - I should have saved a least a little energy and put them in the oven.

I really do enjoy these, especially when they are on sale!

And this was the beautiful result:

Everything was delicious - and what better way to eat your greens than by dipping them in a cheese sauce?

The asparagus was so tender! And I love those mini-potatoes, their skin just seems to fall right off.

The Buffalo Wings are great, I love their spicy kick.

What is your favorite way to prepare your veggies?

Right now I'm definitely feeling the grill - wish we had a real one!
