Watercourse Foods

While I always want to go to the Armadillo Restaurant with my family, none of them ever want to join me at one of my favorite restaurants in Denver - Watercourse Foods. I have a hunch it's because it's an all vegetarian restaurant, but that's one of the things I LOVE about it! 

And that's where my lovely friends come in...


This is Janean, a kind, beautiful and brilliant doctoral student - and can you believe that we have been friends since middle school?!? Our short trip (only 4 days) left me thinking I wouldn't have time to see any of my friends, but luckily it worked out to take a trip downtown and meet up with her for dinner.


Watercourse Foods is warm and welcoming, and while their menu is 100% vegetarian they offer many familiar comfort food items as well as more exotic dishes. They also aim to minimize their ecological footprint by recycling and composting, providing biodegradable to-go containers, and are working towards zero waste.


Just glancing at the menu online has left me salivating... 


And if you haven't figured it out yet... I am an absolute local microbrewery lover. I tried the Red Ale from Odell Brewery in Ft. Collins, CO. It was fantastic, and really complimented my meal. 


As our server was checking our IDs she noticed we were from Bellingham -and as it turns out one of her best friends happens to live in Bellingham! Small world. 



I had the Portobello Mushroom Cap -a "grilled portobello mushroom cap topped with chipotle aioli and served with grilled carrots, rice, refried beans, and avocado." 


Sorry - I really tried with the photos but it was dark! But Janean had the 
SWEET POTATO AND BLACK BEAN TACOS
"Three tacos full of marinated sweet potatoes, black bean, peppers and onions and topped with cilantro lime slaw. Served with avocado, jack/cheddar blend, and homemade salsa" - of which she was so kind to share a bite - they were AMAZING!!! 


And Ross had the REUBEN
"Smoky portobello mushrooms topped with homemade sauerkraut, a special sauce and swiss cheese on grilled rye bread" - which has become his favorite go-to sandwich as of late. 


And just when you thought we couldn't be any happier... this happened: 


You see, they bring around this beautiful plates with all their dessert offerings and essentially seduce you into buying dessert... oh but it was GLORIOUS and worth every bite! 


We eat got one: a piece of carrot cake, a slice of apple pie, and a vegan chocolate cupcake. 

If you are ever in Denver you absolutely must go to this restaurant - the food is fantastic, their servers are friendly and the wine and beer selection can't be beat. One of these trips we need to go and sample their expansive breakfast menu as well!

omg yum. I'm going to go stare at my fridge now, and home it will magically have any of those dishes inside of it.
